Quick Zucchini Bread

Here is a quick zucchini bread recipe that my mother gave me right out of college. I have made it so many times, always with a satisfying result. The girls loved it. Serve warm with butter, plain or lightly toasted.

3 eggs lightly beaten

1 cup veg oil

1 cup sugar (I have reduced this over the years)

2 cups grated zucchini squeezed and lightly packed

2 tsp vanilla

31/4 cups flour

1 tsp baking powder

1 tsp baking soda

3 tsp cinnamon

1 tsp salt

¾ cup raisins (optional)

1 cup chopped nuts (optional)

Makes 2 loaves,


  1. Preheat oven to 350F

  2. Mix first 5 ingredients, sift together dry, combine with zucchini mixture;

  3. add raisins and/or nuts

  4. Bake for 1 hour

  5. Cool at least 10 minutes
