Pizzelles

Traditional Italian waffle cookies

 

The much loved iron pictured with this recipe was a gift over 40 years ago and I have been making them ever since! At first I thought the ANISE flavoring would be too strong for the girls, but they are devoured quickly every Christmas.

Ingredients

2 sticks butter

1 cup sugar

3.5 cups flour

6 eggs

1 tsp vanilla extract

pinch of salt

1 tbl anise seeds - ground a bit to release flavor

¼ tsp anise flavoring

Dust with powdered sugar

Options:

Lemon zest and ¼ tsp lemon extract

 

Instructions

  1. Preheat the pizzelle iron according to manufacturer instructions

  2. Cream butter and sugar. Add eggs one at a time, blending in. Add vanilla. Add anise seed and flavoring. Add flour gradually. Mix by hand until all of the flour is combined

  3. Drop by the tablespoon full on a hot iron according to iron directions. Waffle cookies can be rolled into various shapes like cannoli.
